My Favorite Comfort Foods

Do you have a favorite food that brings great memories just at the thought of it? Is there a food that makes you feel cozy and have an inner peace just at the smell? My favorites are:
Potato Soup- My mother always made potato soup when I was just recovering from an illness not only throughout my childhood but as a Mom myself,she drove forty five minutes to bring me soup and it did make me feel better. In turn,I always made potato soup when my children were ill or when I just felt I needed to feel my Mom's comfort. Now I make it just because it is so good.  Of course,being a cook who is always experimenting, I have changed my Mother's recipe over the years.  It is so simple. I use Knorrs Leek soup mix. I saute an onion in butter (yes I always use real butter, real sugar, the real thing no artificial). The recipe will be in my cookbook which is in the making.
Garlic Mash Potatoes- I leave the skin on the potatoes, a must in any kitchen is "Lawry's Salt Course ground with parsley".  I try to find quick easy ways to make meals. Cook the potatoes, mash them with, yes, real Butter and Lawry's garlic salt and ground pepper and half n half. Yummy.  I always make lots of whatever I cook, left overs are a must, mash potatoes are fantastic, I put them in a pie pan, top them with grated cheddar cheese, and bake until hot. They are also great on top of a mixture of meat and vegetables and baked, my version of shepherds pie, no crust.
Grilled Cheese Sandwich-The second or third day of recouping from illness always brought grilled cheese.
Mom served grilled cheese and tomato soup as a very economical dinner. As a child, we always lived from paycheck to paycheck. When Dad got paid we all went to the grocery store, stocked up for two weeks and ate like a king for four days then slowed down and as we neared the end of the second week we were having smaller meals and of course our favorite, pancakes for dinner. Grilled cheese is oh so comforting.  Everyone may have a different cheese they prefer.  My mom always used velveta (which I think is having a come back). I used american cheese until I could afford to buy cheddar, my favorite is Tillamook medium cheddar or add to the cheddar peppered cheese, brie, gouda for a fun change.  Grilled cheese is great with avacado, ham, or mustard and tomato. Oh so lovely.
Macoroni and Cheese- I have hunted and hunted for a recipe that the whole family will think is terrific.
My friend Trudi makes a killer mac n cheese (she also is the one that introduced me to Lawry's garlic salt, ham roll pinwheels,great bloody Mary's (now I drink them virgin),a wonderful salad, th Tillamook, and many kitchen tips, I could go on and on). I kept misplacing her recipe that she told me on the phone-I was embarrassed to keep asking for it so I started searching for a recipe and after many attempts I found one I really like. It is from  The Gift of Southern Cooking by Edna Lewis and Scott Peacock. I found it in the airport in Burmingham, Alabama. It is rich, high calorie, and yes fat too. It is so frustrating that fat tastes so good. I am making Mac n Cheese for our family Christmas. 
Warm Buttered Sour Dough Bread.  This is so good and I like to dip it in the Potato soup too.

CHILI COOKOFF







Two days ago my husband said "I want to make your chili recipe for the chili cookoff at work".
I said, "who is going to make it", thinking I do not have time to do that this week. Funny thing, just the day before I had thought about picking up the ingredients to make it for the weekend but waited, as I was in a hurry at the store.



I told him what ingredients to purchase, he said "You know your chili won second place last time". I did not remember that??? I made it, that means it would definately be different if he made it. As I love my husband, I offered to cook the chili. He said he wanted one like last time and one a little hotter/spicey. My chili always turns out different, as I am one of those no recipe people, though I have written down a recipe (which I have changed many times) I made the chili and had my assistant, my children, and my daughter pictured do a taste test. Each person chose the spicey chili as their favorite.  They were in agreement with the judges, I got first place. The peppers are from my garden.
